Chicken and Waffles

Let me start out by saying WILDCATS WON! We beat duke by nearly 20 points and now we're moving on to what the Elite 8 (two rounds before the championship). I'm unbelievably stoked for my team!

Last night, Kyle was feeling pretty down due to his knee injury (we now learned it's an ACL tear in addition to the meniscus tear) so I decided to make him one of our new favorite dishes, Chicken and Waffles! This Southern dish is exactly what you'd imagine. Typically it's fried chicken on top of a tasty waffle, but I tried my best to modify it so it would be not so heart unhealthy.

I shopped for "fresh" ingredients [I spent under $25]
  • Wheat pancake mix
  • Hot Sauce (of two varieties: Red Devil and Louisiana)
  • Panko bread crumbs
  • Chicken breast tenders
Step 1: Preheat oven to 350 degrees
Step 2: Get everything ready, and beat 3-4 eggs
Step 3: Give your chicken an egg bath letting excess drip off, and roll in the panko bread crubs. Repeat once more until fully coated.
Step 4: Pop them into the oven for about 20 minutes (I continued to check until Panko was browned and the chicken was cooked throughout)
Step 5: Prep your waffle mix, and make your waffles! I have the luxury of using a waffle maker, it's an investment you won't regret. Each waffle took 2 min to cook.
Step 6: Once the waffles and chicken are done, bust out the maple syrup and hot sauce and you're ready to go!
I know it may seem like a strange combo, but they are to die for! Kyle enjoyed them and both of our little brothers demolished theirs :)

Today I treated myself to an Iced tall nonfat caramel macciato! I typically opt for the skinny version (sugar free and nonfat) but today I was feelin' the sugar. It's the perfect in between meal snack with the caramel flavor of the espresso mixing perfectly with the buttery sweet caramel drizzle.
